"Spinach and Artichoke Pizza" with White Bean Cashew Sauce and Balsamic Drizzle

Pizza is my favorite food. This pizza features white sauce made with white beans (I used cannellini), cashews, nutritional yeast, spinach, garlic and onions. Then I topped it with vegan mozzarella, more spinach and artichoke hearts. Balsamic glaze tops it off for a gourmet treat. I get my spinach, artichoke hearts, nutritional yeast, balsamic glaze and vegan mozzerella (Miyokos brand) all at Trader Joes. ENJOY!

INGREDIENTS 1 can white beans, drained and rinsed---
1/3 cup water---
2 Tbsp nutritional yeast---
1/2 cup raw cashews---
1 Tbsp lemon juice---
2 cloves garlic, minced---
1 onion, chopped---
5 cups fresh spinach, chopped---
1 can artichoke hearts, quartered---
1 cup vegan mozzarella---
1/4 tsp red chili flakes---
Pizza dough---
Balsamic glaze (optional)

DIRECTIONS:


Preheat oven 450°F with pizza stone if available. Boil cashews in small pan for 15 minutes, drain and set aside.

  1. Saute onions and garlic in skillet over medium high heat until soft, approximately 5 minutes.

  2. In blender, combine sauteed onions, garlic, beans, water, lemon juice, drained cashews and nutritional yeast. Blend well.

  3. Return skillet to medium heat. Add 3 cups of chopped spinach and saute for 2 to 3 minutes. Stir in cashew mixture from blender to skillet, season with salt, pepper and 1/4 tsp red chili peppers. Set aside.

  4. Brush pizza dough with olive oil. Spread cashew spinach mixture over dough. Sprinkle with vegan mozzarella then top with remaining chopped spinach and artichokes.

  5. Bake 11 to 12 minutes or until underside of pizza browned. Drizzle with balsamic glaze before serving. (optional)
